Jaggery, or gur as it’s also known, has been used for centuries by Indians as a sweetener and medicine, but that’s not the only reason it’s special. Jaggery tastes great, but that’s not why I like it so much. jaggery taught me valuable life lessons I still use today, and it will teach you too.

Jaggery is a natural sugar made from whole sugarcane. It is usually brown, but depending on its color and how it’s produced, jaggery can range from white to dark-brown to almost black. In other words, it looks exactly like molasses—but it doesn’t taste anything like it. At all.
